Bread Pudding For One
Use any kind of bread — gluten free, white, brown, even leftover pancakes or cinnamon buns.

Ingredients
  • Butter to grease baking dish
  • 1 Large Egg
  • 1Tbsp Brown Sugar
  • 1tsp Vanillaor other flavoring of choice
  • Pinch Salt
  • 1/4 cup Whole milk or Cream
  • 1generous cup 1/2-inch Bread Cubes
  • Butter and sugar for toppingif desired
Instructions
  1. Pre-heat toaster oven (or regular oven) to 350°F. Generously butter a ramekin, coffee mug, or heat-proof small bowl with a 2-cup capacity.
  2. Using a fork, beat the egg with the brown sugar, vanilla and salt until well combined. Whisk in the milk or cream. Fold in the bread cubes until all are wet.
  3. At this point you could add extra ingredients such as chocolate chips or diced apple. See the full blog posting for ideas.
  4. Turn the bread mixture into your greased baking vessel. The top may be dotted with butter and sprinkled with sugar if desired. Bake in the pre-heated oven for about 25 minutes, until puffed and golden, and a knife inserted in the centre comes out clean.
