Crustless Cottage Cheese Quiche
This recipe is easily halved.

  • For the Base:
  • 2cups Cottage Cheese
  • 4large Eggs
  • 1/4cup Flourwhich could be gluten free
  • 1/2 tsp Salt
  • 1/4tsp Black pepper
  • Additional Ingredients:
  • 2 – 3cups Grated cheese, chopped cooked meat or fish
  • chopped drained cooked vegetables
  • and additional seasoning
  1. Blend all base ingredients together until very smooth.
  2. Stir in additional ingredients, such as grated cheese, cooked meat, well-drained cooked vegetables, and additional seasonings by hand. Limit additional ingredients to a total of 2 – 3 cups.
  3. Bake at 350°F until puffed and firm, and a knife inserted in the middle comes out clean, or to an internal temperature between 165 and 185°F . Quiche may be baked in an 8 or 9 inch square pan, in a 9 x 13 inch pan, or in muffin pans as desired.
  4. Cool for 15 minutes before serving.
  5. Cool completely to refrigerator temperature before wrapping airtight to freeze.
