Instructions
Melt chocolate and butter together at 1/3 power setting in the microwave, or over hot water.
Add sugar, stirring to combine.
Add egg, stirring until completely incorporated
Add vanilla and salt, stirring to combine.
Add flour. Stir gently but thoroughly to incorporate all the flour.
Place 2 Tbsp portions into paper-lined mini muffin pans. Bake in a pre-heated 350F oven (toaster oven works well) for 17 minutes, or until tops are dry and barely firm.
Allow to cool completely before serving.
Brownies may be topped with chocolate ganache. Melt 1/2 cup chocolate chips with 2 Tbsp whipping cream; stir together until smooth and shiny.
