1PartSomething Acidiclike lemon juice or vinegar (but not balsamic vinegar — use less of that)
2PartsOilfrom EVOO to canola (but not sesame oil — it’s only for flavoring)

Instructions
Put everything in a little closed container and shake the dickens out of it. The mustard will allow the oil and vinegar to combine into an emulsion, which means your dressing won’t separate back into oil and vinegar for a while.
Allow some time for flavors to meld. Shake again before dressing whatever you’re dressing.
