Baked Oatmeal, Big Batch

Ingredients
  • 2large Eggs
  • 2cups Milk
  • 3/4cup Packed Brown Sugaror less, if desired
  • 2tsp Vanillaoptional
  • 2tsp Cinnamon
  • 1tsp Baking Powder
  • 1/2tsp Salt
  • 2cups Large Flake Oatsnot quick or instant
  • 2cups Chopped fresh fruit or berriesor 1 cup chopped dried fruit
  • 1/4cup Butter, melted and cooled
  • Chopped nuts and/or seedsif desired
Instructions
  1. Preheat oven to 350F. Grease an 8 or 9-inch square baking dish or pan.
  2. Combine all ingredients. Pour into prepared pan.
  3. Bake for 40 – 45 minutes, until puffed and firm in the centre. If eating immediately, serve warm, sauced with vanilla yogurt, syrup, or additional fresh fruit.
  4. If planning for future meals, cool to room temperature before cutting into single servings. Wrap each in plastic and freeze. Re-heat for about 2 minutes in the microwave to serve.
