I wasn’t going to actually post food this week – busy times for everyone.  What with recitals, wind-up events, volunteer recognition events, and about a million sports options (especially if you have kids), it seemed like a good time to take a little break. I had to eat, however, so here’s a quick post.

Chow Mein

This is truly a 15-minute dinner, from first chop to last slurp.  Chow Mein is a dry stir-fry – easy to make, easy to eat, easy to clean up.

Ingredients:

  • Noodles:  I always have some in the freezer in 1-cup portions.  Today happened to be the day I needed to replenish my supply.
  • Vegetables and Protein: Pretty classic:  Carrots, celery, green onion bottoms and tops, and planned-over chicken from my freezer. Use whatever you have on hand — great dish for left-over cooked veggies.
  • Seasoning: Basically, the contents of my fridge door: Soy sauce (2 tsp), Worcestershire sauce (1 tsp), Hoisin sauce (1/2 tsp), “Rooster” sauce (sriracha) (1/2 tsp) and sesame oil (just a few drops). Adjust to suit your own taste, please.

1. Heat the pan; add oil and heat to shimmering.

2. Add noodles and sauce.  Stir to combine, and then let it just sit there for about a minute until the bottom of the noodles are a bit crispy.

3. Push the noodles to the side.  Add the veggies and protein.  Cook just until heated.  Stir everything together.

4. Garnish with green onion tops and sesame seeds.
