Ingredients
  • 1 Tbsp Brown sugar
  • 1 Tbsp Butter
  • 1/2 Cup (approx) Diced peeled apple, or other fruit with spice of choice
  • 1 Tbsp Butter, melted
  • 1 Tbsp Brown sugar
  • 2 Tbsp All Purpose Flour or gluten-free flour
  • 2 Tbsp Greek Yogurt or Sour Cream
  • 1 Egg yolk
  • 1/2 tsp Vanilla
  • 1/2 tsp Baking Soda
  • 1/2 tsp (approx) Spices of choice Cinnamon, Ginger, dash of Nutmeg
  • Pinch Salt
Instructions
  1. In a deep, generously sized coffee mug, melt the butter in the microwave for about 20 seconds. Stir in the brown sugar and spice of choice. Add the diced fruit, turning to coat with sugar. Microwave for 1 minute to soften fruit slightly. Set aside.
  2. In a small bowl, melt butter (20 seconds in the microwave). Stir in brown sugar to cool the butter. Add remaining ingredients, stirring until smooth.
  3. Spoon batter onto the fruit in the coffee cup. Do not stir.
  4. Microwave ON HALF POWER until cake is puffy and set, about 3 minutes. Top of cake will appear moist, but will spring back when lightly touched.
  5. Serve with ice cream or sweetened yogurt and butterscotch sauce. Cobbler can be turned out onto a plate for "upside down cake" presentation.
