Chocolate Peanut Butter Beanie Babies

These little treats are almost guilt-free. They're terrific in a kid's lunchbox, great for tea-time, and they have lots of "staying power" to tide you over at 4 o'clock on a long day, preventing "eat everything in sight" syndrome when dinnertime finally arrives. My school kids, who make a peanut-free version, loved surprising their parents with the "secret ingredient" -- black beans.

Editing this posting reminded me that I haven't made potstickers in a long time. It's not rocket science, and the end results are SOOoooooo much better than store-bought. Perhaps I'll fold up a batch while I watch the Olympics this weekend.
