Ingredients
  • 2 large Eggs
  • 2 cups Milk
  • 3/4 cup Packed Brown Sugar or less, if desired
  • 2 tsp Vanilla optional
  • 2 tsp Cinnamon
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 2 cups Large Flake Oats not quick or instant
  • 2 cups Chopped fresh fruit or berries or 1 cup chopped dried fruit
  • 1/4 cup Butter, melted and cooled
  • Chopped nuts and/or seeds if desired
Instructions
  1. Preheat oven to 350F. Grease an 8 or 9-inch square baking dish or pan.
  2. Combine all ingredients. Pour into prepared pan.
  3. Bake for 40 - 45 minutes, until puffed and firm in the centre. If eating immediately, serve warm, sauced with vanilla yogurt, syrup, or additional fresh fruit.
  4. If planning for future meals, cool to room temperature before cutting into single servings. Wrap each in plastic and freeze. Re-heat for about 2 minutes in the microwave to serve.
