Do-It-Yourself Pad Thai

Although I love going out for Thai food, this version of Pad Thai is fine-tuned to suit my particular tastebuds. You can do it too! The recipe uses ingredients that are easy to source, and I'm sure you'll find it's almost as easy as take-out once you get the hang of it. It's truly "fast food". Sorry about the dirty dishes...but it's worth it!

Single Serving Caramel Apple Coffee Cup Cobbler

I came across a recipe for "Gooey Chocolate Microwave Mug Cakes with Caramel Sauce and Peanuts" on the Epicurious site that looked pretty exciting, although nothing like the cake pictured in this recipe.  I'll test-drive the chocolate recipe soon, but meanwhile I was pleased to find a lot of validation for my own coffee cup cake recipe, which was due for editing and re-publishing anyway.
