Ingredients
- 2 ounces Dark chocolate (baking or eating)
- 1/4 cup Butter
- 1/2 cup granulated sugar
- 1 Large Egg
- 1 1/2 tsp Vanilla
- 1/8 tsp Salt
- 1/4 cup plus 2 Tbsp All Purpose Flour
- or 1/4 cup plus 2 Tbsp Gluten Free flour plus 1/8 tsp Xanthan gum
Instructions
- Melt chocolate and butter together at 1/3 power setting in the microwave, or over hot water.
- Add sugar, stirring to combine.
- Add egg, stirring until completely incorporated
- Add vanilla and salt, stirring to combine.
- Add flour. Stir gently but thoroughly to incorporate all the flour.
- Place 2 Tbsp portions into paper-lined mini muffin pans. Bake in a pre-heated 350F oven (toaster oven works well) for 17 minutes, or until tops are dry and barely firm.
- Allow to cool completely before serving.
- Brownies may be topped with chocolate ganache. Melt 1/2 cup chocolate chips with 2 Tbsp whipping cream; stir together until smooth and shiny.
