Ingredients
  • 1/2 cup Greek Yogurt or Sour Cream
  • 1/2 cup Whipping Cream
  • 1 Tbsp Lime Juice
  • Salt, Pepper, Lime Zest, Chipotle in Adobo To taste
Instructions
  1. Mix the Yogurt or Sour Cream, Whipping Cream and Lime Juice in a bowl. The longer this sits, the thicker it will get. You could leave this out, covered, at room temperature for an hour.
  2. You can leave it plain, but it's even more delicious if you season it up with a pinch of salt, a little lime zest, and just a little Chipotle in adobo, finely minced, about 1/4 teaspoon to start. Be sure to taste and adjust to your own palate -- I like to add quite a bit of everything, but you many want it milder.
  3. You can use this concept to make low-fat creamy salad dressing by using low or no-fat yogurt or sour cream, and no-fat creamer or evaporated milk. Add chives and dill, and it's almost like Ranch Dressing. Keep the batch small -- it won't have the keeping power of bottled commercial dressing.
