I developed this recipe to ward off my tendency to pick up drive-through food on my way home.  It’s a fast and easy way to use common ingredients you probably have on hand right now, and use up some leftovers at the same time.

Ingredients
  • 1 Large Egg
  • 1/4 cup Milk
  • 1/4 cup Cream (34% to 10%)
  • 1 Tbsp Flour (all purpose or gluten-free)
  • 1/2 cup Diced cooked meat and/or cooked vegetables
  • 1/4 cup Grated or cubed cheese of choice
  • To Taste Salt, Pepper, and seasonings of choice
Instructions
  1. Grease a small (6" diameter) ovenproof or microwave safe casserole or soup bowl, at least 2" deep.
  2. Arrange diced meat and/or vegetables in the bottom of the dish. Sprinkle with cheese.
  3. In a separate bowl, whisk together egg, milk and cream, flour and seasonings.
  4. Pour egg mixture over meat and/or vegetables in the dish.
  5. Microwave Method: Microwave at half power for 5 to 7 minutes (depending on the power of your machine) until puffed and firm in the centre. Let stand at room temperature for at least 5 minutes before eating, or you’ll burn your mouth.
  6. Toaster-Oven Method: Bake in a pre-heated toaster oven (or regular oven) at 350°F until puffed, golden and set, about 20 to 30 minutes.
