This is the most basic of recipes.  You can season it any way you like by adding fresh or dried herbs and spices, tasting as you go — it’s a great way to experiment with flavor combinations.  Add an egg yolk for really rich flavor and slightly thicker texture.

Ingredients
  • 1 Part Something Acidic like lemon juice or vinegar (but not balsamic vinegar -- use less of that)
  • 2 Parts Oil from EVOO to canola (but not sesame oil -- it's only for flavoring)
  • 1 Pinch Salt and pepper
  • Additional flavoring elements of choice
Instructions
  1. Put everything in a little closed container and shake the dickens out of it. The mustard will allow the oil and vinegar to combine into an emulsion, which means your dressing won't separate back into oil and vinegar for a while.
  2. Allow some time for flavors to meld. Shake again before dressing whatever you're dressing.
