Ingredients
- 1 1/2 cups Rolled Oats (Large flake preferred)
- 1 cup Chopped Nuts, any kind
- 1/2 cup Seeds, Ground Flax, Sesame, Millet, Sunflower, or a mixture
- 1/4 cup Coconut, any kind
- 1/2 cup Applesauce
- 1/2 cup Packed Brown Sugar
- 2 Tbsp Liquid Honey
- 2 Tbsp Maple Syrup or Corn Syrup
- 2 Tbsp Unsweetened Cocoa Powder
- 1 Tbsp Neutral flavor Vegetable Oil
- 1/2 tsp Salt
- 1/2 Tsp Cinnamon
- 1/2 Tsp Ground Ginger
- Optional Dried Fruit of choice
Instructions
- Combine oats, nuts, seeds and coconut in a large bowl.
- Combine all other ingredients except dried fruit. Stir to make a slurry.
- Add the cocoa slurry to the oat mixture, stirring to coat the dry ingredients well.
- Spread on a parchment-lined baking sheet in a uniform layer.
- Bake in a preheated 300 °F oven for 1 hour, rotating the pan half-way through the baking time.
- Allow to cool completely before breaking into nuggets of the desired size. Mix in dried fruit, if using.
- Store in an airtight container at room temperature for up to 2 weeks, or in the freezer for up to 6 months.
