This recipe was designed for the Bahn Mi Burgers, but it’s pretty tasty on just about anything where you would like your mayo to have a little extra something.

This is NOT the popular Chipotle mayo, although you could add some if you wanted to 🙂 All additions are to taste, so the amounts are merely suggestions.

Ingredients
  • 1 cup Mayonnaise
  • 1/2 tsp Hot Sauce Frank's, Tabasco, etc.
  • 2 Tbsp Green Onion Tops finely minced
  • 2 Tbsp Lime Juice
  • 1 tsp Lime zest
  • 1/4 tsp White pepper
Instructions
  1. Combine all ingredients in a bowl. Taste and adjust seasoning as desired. The finished mayonnaise should be zesty, but not overly spicy/hot.
  2. Fortified Mayonnaise can be kept in a covered container in the fridge for up to 1 week.
  3. *You could use half mayonnaise and half Greek Yogurt for a "lighter" dressing.
