This recipe was designed for the Bahn Mi Burgers, but it’s pretty tasty on just about anything where you would like your mayo to have a little extra something.

Ingredients
- 1 cup Mayonnaise
- 1/2 tsp Hot Sauce Frank's, Tabasco, etc.
- 2 Tbsp Green Onion Tops finely minced
- 2 Tbsp Lime Juice
- 1 tsp Lime zest
- 1/4 tsp White pepper
Instructions
- Combine all ingredients in a bowl. Taste and adjust seasoning as desired. The finished mayonnaise should be zesty, but not overly spicy/hot.
- Fortified Mayonnaise can be kept in a covered container in the fridge for up to 1 week.
- *You could use half mayonnaise and half Greek Yogurt for a "lighter" dressing.
