Ingredients
  • 1/2 cup Dry pasta (small shapes work best) (Gluten Free Pasta works too)
  • 1 tsp Butter (that's a "blob")
  • 1/4 cup milk or cream (or evaporated milk, or no-fat cream)
  • 1/2 cup Grated cheese, loosely packed (about 2 ounces)
  • Seasoning of choice, to taste (salt, pepper, hot sauce, dry mustard, herb blend, etc., etc)
  • Add-ins of choice (bacon bits or spinach -- check the full posting for ideas)
Instructions
  1. In a 1-quart saucepan of boiling, salted water, cook the pasta to the "al dente" stage. Drain and return to the pot.
  2. Add butter and milk or cream. Bring to the boil.
  3. Reduce heat or remove pan from the burner. Add cheese and stir enthusiastically until it is fully melted.
  4. Season to taste. Stir in optional add-ins.
  5. The sauce will thicken as the mixture cools, so don't eat it right out of the saucepan. Put it in a proper bowl, and enjoy.
