Ingredients
- 1 Zucchini (8 - 12 inches) stripped into noodles
- 1 Cup Other vegetables
- 1 - 2 Tbsp Vinaigrette (just enough to moisten the vegetables)
- Fresh herbs to garnish
Instructions
- Toss the zucchini noodles with any other vegetables that can be similarly "noodled", or cut into long, thin strips
- Add just enough vinaigrette to lightly coat all the vegetables.
- Let the salad sit for 5 - 10 minutes. The vinaigrette will soften the vegetables, making them more noodle-like.
- Once the dressing is on the salad, serve it soon. If you need to prep ahead, leave the vegetables undressed until just 10 minutes before serving.
- Garnish with fresh herbs (basil, cilantro, parsley, or green onion).
