Ingredients
  • 1 Zucchini (8 - 12 inches) stripped into noodles
  • 1 Cup Other vegetables
  • 1 - 2 Tbsp Vinaigrette (just enough to moisten the vegetables)
  • Fresh herbs to garnish
Instructions
  1. Toss the zucchini noodles with any other vegetables that can be similarly "noodled", or cut into long, thin strips
  2. Add just enough vinaigrette to lightly coat all the vegetables.
  3. Let the salad sit for 5 - 10 minutes. The vinaigrette will soften the vegetables, making them more noodle-like.
  4. Once the dressing is on the salad, serve it soon. If you need to prep ahead, leave the vegetables undressed until just 10 minutes before serving.
  5. Garnish with fresh herbs (basil, cilantro, parsley, or green onion).
